Dementia


Credits Taking care of someone with dementia can be difficult and tricky. I had talk in my company earlier, figured I can share what I've learnt to you as this can happen to anyone including your loved ones. Dementia It is a condition that causes progressive intellectual decline leading to increasing difficulties in coping with everyday activities.  Dementia can rob sufferers of their memory and thinking skills, and even alter their personalities. They may misplace personal belongings, forget their way home or misidentify children and spouses in the advanced stages of the disease. Behind the facade of dementia, however, the "old self" remains. Dementia does not change the desire for a normal and dignified life. The morning coffee at the coffee shop remains a cherished ritual, even if they struggle to find their way home afterwards. They continue visiting the supermarket, and sometimes over-buy groceries without realising, only because deep down, they still see themselves as providers for the families. They may lose their temper, not because they want to, but because they too are struggling with what is happening to them. Keeping them behind locked doors at home or in nursing homes may be the convenient option, but it would devastate them, the way it would devastate any of us. Recipe - Chocolate Creme Brulee


I studied culinary and was a chef for a couple of years. I have gathered some really easy recipes that anyone can try at home if you have the equipment and time! hehe For today, it will be a dessert - Chocolate Creme Brulee! What you need Equipment: 1. Combination oven (Settings - Convection mode) 2. Saucepan 3. Mixing Bowl 4. Whisk 5. Cups/Molds to pour the mixture in (preferably around 5cm width, 5cm height) Ingredients: 1 1 Litre Unsweetened Whipping Cream 2. 250G Egg Yolks 3. 300G Sugar 4. 50G Cocoa Powder Steps: 1. Preheat oven at convection at 30% moisture, 125 degrees Celsius). 2. Pour cream into saucepan and bring it to soft boil. 3. In a mixing bowl, add the egg yolks, sugar and cocoa powder together and whisk. 4. Once the cream boils, pour the cream into the mixture from Step 3 slowly. Lightly whisk the mixture while you pour the cream in. 5. Leave mixture to rest for 5 minutes. 6. Skim off the foam at the top of the mixture. 7. Pour mixture into molds/cups and place molds/cups on a tray. Pour some a level of water on the tray before putting it in the oven. 8. Bake for 30 minutes. 9. After it is baked, you can pour a thin layer of sugar on the surface and use a blow torch and burn it lightly to create the 'cracking' effect'. Enjoy! ....

April's Bakery in Singapore!


April's Bakery makes home-made pies and they have 60 over outlets in Thailand, Bangkok!!! In April, they have just opened their first branch in Singapore! It is located at Tampines MRT Station. So basically they have 11 flavoured-pies (Taro, Red Bean, Thai Milk Tea, Green Tea, Sweet Egg Floss, Sesame, Purple Sweet Potato, Custard, Pumpkin and Coconut). I did not managed to get most of the flavours as they are sold out so I have to steal from google an image of the inside of the pies! Credit Being a glutton, I went to buy some pies for myself so I can laze at home and eat them all day long!   ....

Hong Kong Trip!


I visited Hong Kong for a week! We spent 2 days in Disneyland, 1 day in Ocean Park, and 3 days wandering around the city. I have nothing else to write so I'll just bore you with some pictures! We were not celebrating anything but we just got free balloons. Fun fact: I was so afraid to sleep at night cause I scared the balloons will explode on me in the middle of the night. Some desserts from Disney! What we ate at One Dim Sum! It was previously crowned with a Michelin Star but it was removed due to its lack of consistency (which is a huge factor to be in the Michelin guide!) Really nice coconut milk drink! TRY IT! PINEAPPLE BUN!!! French Toast for breakfast! Free sticker I got from Disneyland hehe ....
