Recipe - Chocolate Creme Brulee

I studied culinary and was a chef for a couple of years. I have gathered some really easy recipes that anyone can try at home if you have the equipment and time! hehe
For today, it will be a dessert - Chocolate Creme Brulee!
What you need
Equipment:
1. Combination oven (Settings - Convection mode)
2. Saucepan
3. Mixing Bowl
4. Whisk
5. Cups/Molds to pour the mixture in (preferably around 5cm width, 5cm height)
Ingredients:
1 1 Litre Unsweetened Whipping Cream
2. 250G Egg Yolks
3. 300G Sugar
4. 50G Cocoa Powder
Steps:
1. Preheat oven at convection at 30% moisture, 125 degrees Celsius).
2. Pour cream into saucepan and bring it to soft boil.
3. In a mixing bowl, add the egg yolks, sugar and cocoa powder together and whisk.
4. Once the cream boils, pour the cream into the mixture from Step 3 slowly. Lightly whisk the mixture while you pour the cream in.
5. Leave mixture to rest for 5 minutes.
6. Skim off the foam at the top of the mixture.
7. Pour mixture into molds/cups and place molds/cups on a tray. Pour some a level of water on the tray before putting it in the oven.
8. Bake for 30 minutes.
9. After it is baked, you can pour a thin layer of sugar on the surface and use a blow torch and burn it lightly to create the 'cracking' effect'.
